The smell from the school kitchen has been pungent with spices, as Year 3 and 4, have explored Indian recipes. Especially popular were Nan Khatai, a cardamom flavoured biscuit. The class have asked for the recipe, so they can impress their family and friends with their cookery skills.

NanKhatai (Cardamom Indian biscuits) Recipe

 

80gunsalted butter,plus extra for greasing

3-4drops of vanilla essence

!1/4 tsp greencardamom, seeds ground

155gplain flour, sifted, plus extra for dusting

50gfine semolina

Method

1.Preheat oven to 190C/gas 5 and lightly grease a baking tray. 

2.In the bowl of an electric mixer or using a wooden spoon, creamtogether the sugar and butter until light and fluffy. Beat in thevanilla essence and cardamom. 

3. Add the flour andsemolina and mix into a firm paste. Knead gently for 5 minutes. 

4.Keeping your hands dusted with flour, take golf ball-sized pieces andflatten into circles about 1.5cm thick, or roll out the dough and usea biscuit cutter. 

5. Put the biscuits on the preparedbaking tray at least 2.5cm apart and bake for 12-15 minutes or untillight brown. Cool on a wire rack. 

6. Store in anairtight container for up to 3 weeks.
